Around 848, under the reign of Nominoe, 1st King of Brittany, the city became the head of a temporary bishopric. This village is situated in the heart of the salt marshes. Like Clis, there are many typical houses of salt workers. In our case, flower of salt is crystallisation from a saturated saline solution, which occurs, like many changes in physical states, in the colder zones. For flower of salt, this happens on the surface where the air is colder than the sun-heated water, whereas for coarse salt, it is at the bottom where the clay is cool. Regarding the potential for micro plastic in Guerande salt: Micro plastic floats on the surface of the water. This salt is created at the bottom of a series of clay-lined lagoons. The seawater is naturally filtered seventeen times before it reaches the last of the collections ponds. These age-old systems of filtration are very sophisticated; sometimes it is the water of the surface which is filtered, sometimes the water of the middle and sometimes the bottom water in turn, up to seventeen times.

To salt cooking water properly, you have to taste it! Once the salt has completely dissolved (!), well salted hot cooking water should remind you of seawater - well salted cooking water often saves you adding salt later and really enhances the natural flavour, e.g., of pasta or vegetables! Unlike refined industrial salts, Le Guérandais Guérande Salt does not undergo any form of washing or chemical treatment, and nothing is added (anti-caking agent, flow improvement agent, fluorine, iodine or nitrite).

How long does salt last?

Our flower of salt is harvested with the same tools that have been used for centuries and we use no additives. It therefore has nothing to compare with refined industrial salts which are harder and more aggressive.
