The AeroPress’s instructions call for brewing right-side up. That means you attach the filter and cap to the chamber, set it on your mug, then fill it up. Fresher coffees taste better across the board, and adequate pressure yields more flavor, but crema per se doesn’t cause good flavor. It just correlates with some things that do.
