It is on this ancestral legend that the history of Cihuatán rums begins, true ambassadors of El Salvador who reveal all its richness and know-how. This Rum Cihuatan Indigo comes directly from its inspirations from Maya culture, indigo blue is a color frequently found on frescoes of Mayan temples. The Cihuatán valley’s closely guarded secrets and legends are now revealed through our aged rum to those curious spirits with a thirst to explore.

Matured solely in ex-Bourbon barrels the Indigo is smooth and elegant with hints of creamy dulce de lache, vanilla, cappuccino, cocoa, lemongrass and hazelnut. Cihuatán Indigo from El Salvador boasts a blend of chocolate, vanilla, and toffee with nutty undertones but falls short in complexity and finish. The speciality of this human and artisanal distillery, also resides in its self sufficiency since, in addition to the sugar and molasses it produces, it generates its own electricity from bagasse, the fibrous residue of sugar cane. This approach has allowed them to create one-of-a-kind rums, such as Cihuatán Xaman XO, uniquely finished in Mayan Ceiba casks.Indulgent notes of oak wood, sweet vanilla, dark chocolate, hazelnut cappuccino, butterscotch and creamy Dulce de Leche. Indigo Rum is handcrafted at the distillery in El Salvador and barrel aged in ex-Bourbon oak casks for 8 years. Therefore the teams control the quality of their products, from the harvest of sugar cane to bottling, including distillation and aging.

As the offshoot of long established sugar producer Ingenio La Cabaña they haven't been under the same pressures as some new distilleries and have had the luxury of allowing their rums the time needed to mature and the Indigo 8 year old was their first release, starting in 2015. The name "Indigo" was inspired by the color blue, which was crafted by the ancient Maya using the Indigo flower (anil).Aged for 8 years in ex American Oak Bourbon barrels which has produced a rum that has some rich Vanilla notes with hints of Coffee and Dark Chocolate. The entire production chain from sugarcane seeding to distilling, to ageing to bottling is controlled. The palate is smooth, with notes of vanilla, dark chocolate, hazelnut coming through with hints of Cappuccino and Lemongrass and a smooth finish.
