We would recommend keeping these Jaffa Cakes in the fridge because of the jelly topping. Keep them in an airtight container for 3 days or so. Can I freeze these Jaffa Cakes? No doubt many of you will argue with me, but I am with McVitie’s on this one. Jaffa Cakes (gluten free or not) are CAKE! Prepare a small baking tray or flat-bottomed dish (approx 7 inch x 10 inch/18 cm x 25 cm) by completely lining with baking paper (base and sides) making sure there are no gaps for the jelly to leak through the paper. This makes the jelly easier to remove intact.
