I basically can't be faffed with getting my big stand mixer out and lugging it around the house! But what I will say is using my stand mixer made a big difference to how these blondies turned out. So, if you have an electric whisk or mixer then I would recommend you use it for whisking these up. For example, if there is too much blondie batter seen at the top, I place a few drops of brownie batter and use the tip of my knife and I make small swirls at the top without going deep. I know I say this a lot but this is honestly one of my favourite recipes to date. I really enjoy making blondies especially my Jammie Dodger and Biscoff ones but there's something extra special about the blondie recipe I'm sharing with you today. See that tray of gooey chocolate squares in the bakery case? They may look alike, but there’s a big difference between brownies and blondies. While brownies are made with a chocolate batter, blondies are made with a vanilla batter. Brownies are also denser than blondies because they have more chocolate in them. I used Carnations caramel for the caramel - but do NOT add more than 150g to the mix unless you are 100% sure you've got the blondie mix right. If you add too much, it probably won't bake very well at all. The Caramel stuffed Nutella Blondies Recipe:

So, a very long time ago I had a caramel white chocolate blondie recipe on my blog. It was something that I liked to bake, but it was probably the worst recipe on my blog, ever. I can comfortably say that, as more often than not, it didn’t work for other people. It can be done by hand but I find the mixture has more of a tendency to split when doing it this way. If you are an elbow grease type of baker - don't let that deter you as I have made some amazing blondies by hand. They are just even more perfect if you have the extra welly of a mixer. How to make them My mind always thought that maybe the people who made the original blondies used a different caramel to me (As they can often behave differently), but we will never know! For this one, as the blondie recipe itself is so different, it’s easier! Add the flour to the bowl and gently fold it through the mixture by hand. Mix only until you can no longer see white streaks of flour.

I transferred half of the blondie batter into a 20cm square tin, then added two whole bars of Galaxy Caramel on top. Well it's half term at the moment. My kids spent most of their day in pyjamas playing video games whilst sampling various bits of recipes I've been making today.Next, I added the vanilla extract and eggs. I used my stand mixer to whisk everything together for about 3 minutes. The blondie batter went almost mousse-like in texture and was very light.
