This delectable chocolate cookie, baked in the AGA Cast Aluminium Sauté Pan on the simmering plate, results in a gooey texture that is simply irresistible. For the last two years I’ve bought a pudding from Bertinet’s in Bath and they’ve gone down well with my family. The lamb was cooked with a little port and redcurrant jelly and the mash topping was a mixture of potato and celeriac. On reflection, I think breasts, whether of the pheasant or chicken variety, should not be cooked for very long, so my suggestion for adapting this recipe for the Aga would be only to cook it (in the simmering oven of course) for the initial 45 minutes. The gentle radiant heat of the AGA is perfect for vegan baking where traditional convection and fan ovens can produce a dry, crumbly texture.

Perfect for a meat free menu, this filling dish is a delicious main meal or part of a selection of dishes. What is more, I chose the recipe because it was a slow braise, which in my opinion ought to have ensured tender, succulent meat.
