Cut the rhubarb to 2-3cm lengths and cut the ginger into cubes (you don’t have to peel it is you don’t want to). If you feel your drink needs some extra heat, you can mix it with ginger beer – the fizz will be refreshing, and this is a nice warming drink for a cool evening.
