Simply add our Tarka sauce to a pan of any cooked meat, fish or vegetables to take your homemade curries to the next level for a fast, convenient and delicious Indian meal that the whole family will love! Apply a thin coat of Aagrah Achari Tarka sauce to the lamb steaks and refrigerate for at least 1 hour to marinate, or overnight if you have time. Add 70ml of water to the jar, replace the lid, shake, and empty the remaining jar contents into the pan, simmering for 5 minutes until the sauce is no longer watery. Bring to a boil with the lid on and simmer gently for approximately 10 minutes, or until thoroughly cooked. Add your grilled meat/vegetables and stir through until cooked and sauce reaches the desired consistency. For those that don’t like a lot of spice, then I would leave the chillies out and maybe add a tablespoon or so of natural yoghurt.

I often made my own which takes ages but these are great instead as standby and extra dishes for when more suddenly turn up. Best cooked with chicken but also delicious with meat/vegetables, a Hydrabadi is great served with Pilau Rice or Garlic Nan. Having never tasted Biltong before I have to admit I was expecting it to be a bit like Jerky which, let's be honest, has a bit of a rep as being tough, doesn't it? Spices including chilli, cumin and turmeric are expertly fried to extract maximum flavour, producing a truly authentic Balti Tarka!
