Lao Gan Ma is a famous brand that stands out for its ease of use, long-lasting aroma, and affordability. Lao Gan Ma was started by a woman named Tao Huabi, in 1996 when she created the company from nothing. Chinese consumers tend to want foods that perfectly encapsulate regional cuisines and use ingredients grown from the soil of those regions. When a new highway brought truck drivers to Guiyang, she gave them free jars of the sauce and they spread the word.Open it, and you find the formidable combination of the odd peanut, a few crunchy, salty soya beans, MSG, and oil so infused with the chilli that it seems to glow. Recommendations: cooked with scrambled eggs, topping for fried rice, or thrown in your favorite packaged ramen. But Lao Gan Ma is also increasingly popular overseas, especially in the US, where several boutique versions have popped up in recent years, including Fly By Jing and Momofuku chilli crunch, both of which ditch MSG in favour of natural flavours. All of the jars and bottles looked similar, and because I tend to trust the opinion of the masses in large, busy supermarkets, I grabbed a jar of the stuff that was most popular, one with a sticker of a not-quite-smiling Asian matriarch ( gan ma means ‘godmother’ in Chinese). The crispy texture blends seamlessly, creating a tantalising side dish that goes well alongside numerous main dishes. It’s thick and crunchy, a texture it owes to an abundance of dried chillies that are fried and crushed.
