Quite simply, Glenfarclas is one of the great distilleries. Not just because of its proudly independent heritage but because of the superior quality of the whisky produced there. The Grants’ dedication to age statements and commitment to sherry maturation, regardless of cost, should be an inspiration to other distillers. Bottle is 90% full and has been opened for about 2 weeks to allow for some air time. This is currently not commercially availible in the US. I like spirits with a strong character. I want flavour and complexity. I also seek out smoothness. Not many spirits achieve that perfect balance of smoothness and character. In my experiece, albeit limited, I have encountered very few whiskies can have a strong, powerful personality while maintaining a balanced smoothness. With Water everything from neat but turned up a notch, peat is more evident, lovely caramel as well. The palate starts of lovely with big cherries and milk chocolate praline. It is sweet and round going into Winter spice and Heather honey. Affordable heavily sherry-influenced Speyside isn’t so easy to come by these days, especially when bottled at a higher strength, but this is Glenfarclas offering just that. The 15 is wonderfully rich, with good body. In my opinion, it is the strongest of the Glenfarclas range – along with the 105. Excellent whisky. About as good as you can buy in this price range.

This winter I made my first Christmas cake. I followed a Nigel Slater recipe, and was wowed by the smell of it cooking in the oven. It's better than anything else I've ever baked - all those flavours and ingredients mixing together, and the aromas just fill the house. It smells better than bread cooking. The nose is predominantly malt, burnt salt caramels, and fiery red pepper jelly. There are hints of coffee, chocolate, and tobacco smoke. Though rich and heady, there is an herbal, almost eucalyptus, undercurrent to it. Nose: Pungent, grapey resin, alongside prunes, dried red apples, and other jammy dried fruits. A tart top-note, like red wine vinegar but not as acidic, comes and goes while the overall impression slides towards jam and those bright red candied apples at the fair. Deeper in, there is an oily citrus note, like orange bitters. A rest in the glass reveals some vanilla. Direct firing does mean, however, that the stills degrade faster, as charring and cleaning strip the copper. Therefore, Glenfarclas is forced to change over its stills more frequently (every 20-30 years) than other distilleries might. On the nose: Candied nuts, lime juice, zucchini bread, roasted marshmallows, green grapes, whole cloves, and a gently smoky-woody note that tips into a green astringency.
