It’s great, in a way. It’s lovely that we are now getting young people who want to be chefs, because it’s glamorous, and because they recognize that it’s exciting, and it’s creative. It’s not like sitting in an office talking to a computer all the time. However—and I believe COVID has started to change this—there’s the hours, and the pay, and the conditions under which most chefs work.
