Next, use your fingers to gently pry apart the flower bud. You’ll notice the seeds themselves are attached to hairy carriers that allow them to be blown away by the wind. Our current go-to way to cook artichokes: halve and remove the choke, add a clove of garlic, pad of butter, and slice of lemon in each cavity, drizzle over a little olive oil, generous squeeze of lemon juice, salt and pepper.
