In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, and sauté for 5 to 6 minutes until vegetables have begin to soften. Add the carrot, bell pepper, tomatoes with their juice, ginger and stir. Start by gently frying a chopped onion in vegan butter until it is soft. Add grated ginger, crushed garlic, curry powder, Chinese five spice and turmeric and cook for a few more minutes, stirring often.
