It's absolutely perfect for almost any type of 'Alexander' cocktail - particularly brandy or rum versions. Gabriel Eugène Massenez, in the 1950s, used her family connections with great French chefs, many of whom were Michelin-starred, to push Massenez spirits and liqueurs onto the lists and into the kitchens of many famous restaurants in Paris and across France, which further popularised the Massenez brand.

In 1979 Gabriel built a new distillery in Val de Villé, which was handed over to the stewardship of her daughter Manou in 1982. He developed his distilling skills and knowledge which he passed onto his son Eugene Massenez, who in time became a master distiller himself. Recipes for home-made chocolate liqueurs may also include raw eggs as an ingredient, presenting a risk of salmonellosis. The appearance of our sous vide version is clear, and while it might not have so much cacao on the aroma, it’s richer and more full-bodied on the palate, compared to the instant version. Crème de cacao may be either clear or a dark caramel color, which is often labeled dark crème de cacao.

Its aroma is bright and vibrant with fresh peppermint and a sweetness comes through in the flavour, like candied mint alongside the natural, menthol-heavy taste of the peppermint. This version has plenty of cocoa flavor, which was of course our goal, but it’s not as full-bodied as I’d like.
