We're not so much a business as a steward of the piece of earth we use, a time traveller, passing from the era of oil into whatever comes next. Trees live a long time; there are nut trees alive in Ireland today that were planted three centuries ago. And quite likely, in 300 years time - ten generations - there will be trees still alive in Ireland that originated at this nursery. It feels a bit like looking into the wrong end of a telescope, but if you reach far enough, you can reach to the future. Individual ingredients, whether they are ‘superfoods’ or not, won’t make a product healthy if it is high in salt, saturated fat or sugars.

If you do want to increase the amount of protein in your diet, healthy sources of protein include unsalted nuts, low-fat yoghurt and hard-boiled eggs. The Fruit & Nut Breakfast Mix is a delicious mixture of dried apricots, apples, dates, sultanas, Brazil nuts, cashew nuts and flaked almonds. This mix will set you up for the rest of the day with its energising properties, and help keep you full up all the way through until lunch time. The beauty of this cake is that you can use whatever dried fruit you have, add nuts and cherries - anything you like or have. The only thing you have to remember is to keep the total weight to 400g (14oz). Secret Ingredient My special ingredient in this Everyday Fruit Cake is a spoonful of jam - any flavour. I started putting jam in when I was given a couple of jars that had been slightly overcooked. The jam was too stiff and treacly tasting to use as it was, so I added it to a fruit cake and liked it.

Our trees are heat-grafted under contract, shipped to us immediately after the callusing process is completed, then grown on at the nursery in organic conditions in raised beds. Fruit and Nut is the only nursery in Ireland raising heartnuts and we pride ourselves on the high quality of our trees. Nut production can begin as early as year 4, though more typically it is year 7 or 8. There are lots of different fruit and nut mixes available and something for everyone to choose from, no matter which fruits or nuts are your favourites.

You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:Avoid chocolate-dipped or yoghurt-coated varieties (yoghurt coatings usually contain added ingredients like palm oil and sugar, which aren’t in actual yoghurt) or ones containing salted caramel, marshmallows, chocolate chips or coconut. Some bars have more calories than a Mars bar. A small bar typically contains around 150kcals – that’s less than a Mars bar (228kcal) but more than a banana (89kcal). Because these bars are made from dried fruit and nuts they are more nutritious than biscuits, chocolate or sweets. They are also high in fibre and the fats are usually from nuts, which contain healthier unsaturated fats, unlike the saturated fats found in chocolate, cakes and biscuits. To make this fruit cake easy, I use the all-in-one method. You can use any machine to mix the batter (as the professionals call the cake mix without the fruit). I often make an Everyday Fruit Cake to take with us when we go on holiday because it travels well and keeps for a week. It's the ideal cake with a cup of tea when you've been out for the day.
