The biscuits were distinctly more chocolaty than the others and held their own when dunked into a freshly poured cup of tea. When they are made with custard powder they are known as “yo-yos” – this is more localised to Melbourne.

Transfer the biscuits onto a baking tray lined with baking paper or a silicone mat and bake for 10-11 mins until the biscuits are firm and starting to go golden on the edges. In the bowl of an electric mixer add the butter and sugar and mix on a medium speed for 5 minutes until the butter is light and creamy.

When we've worked our way through all those custard creams I'll be putting the tin to good use storing my sewing supplies or felty works in progress. The recipe from the Women’s Weekly “Best Ever Recipes” cookbook published back in the 1970’s or 1980’s which, to this day, is still my all time favourite cookbook. Pureicing sugar (packet labelled as such) is made with 100% sugar only and is used for icing that sets hard, like royal icing.The powder is activated when liquid is added, producing carbon dioxide and forming bubbles that cause the mixture to expand. Leave to completely cool before spreading the buttercream and sandwiching the biscuits together otherwise they might break.
