These jolly truffle chocolate treats are utterly delicious, and feature delicious pieces of hazelnut and puffed rice for a texture sensation that can't be resisted. COMBINE extra cream and extra chocolate in a small saucepan and stir over a low heat until the chocolate has melted. Cool slightly. Aldi is helping to put a smile on guests’ faces this festive season with their irresistible new range of Christmas puddings. A delectable fusion of traditional flavours and modern twists, they are destined to be the centrepiece of every seasonal feast.

SPOON the mixture into a greased and base paper lined 2.5 litre capacity pudding basin. Cover with a tight fitting lid or a double layer of foil and secure with string, if necessary. Place on an upturned saucer in the base of a large saucepan or boiler. Pour boiling water into the saucepan so that is comes halfway up the sides of the basin. Cover the saucepan with a tight-fitting lid and steam for 1½–1¾ hours, topping up water as required. CREAM the butter and sugar until light and fluffy. Gradually add the egg, beating well between each addition. Fold in the rind, sifted flour and cocoa, fruit mixture, milk and choc chips.

COMBINE the condensed milk and chocolate in a small saucepan. Stir over a low heat until the chocolate has melted. Transfer to a bowl and chill in the freezer for 15 minutes. BEAT the chocolate mixture and PHILLY with an electric mixer until smooth. Add the cream and beat until soft peaks form. Fold through the dried fruit mixture, cherries, almonds and spices. Pour into a base lined 1.5 litre pudding bowl. Cover and freeze for at least 8 hours.

MELT the white chocolate in a microwave safe plastic bowl on 50% POWER. Begin with 20 second bursts then reduce to shorter bursts as the chocolate melts, stirring well between each burst of power. Only microwave until 75% of the chocolate has melted. The rest will melt as you stir it. COMBINE the chocolate and condensed milk in a saucepan, stirring occasionally, over low heat until melted and smooth. FOR best results, decant the pudding some hours ahead by immersing three quarters of the bowl in hot water for 10–15 seconds to just loosen the ice cream. Invert onto a plate and use a metal spatula to smooth or create a decorative finish. Freeze for 2 hours or until firm. DIVIDE fudge into 18-20 x ¼ cup amounts and roll into balls. Place onto a paper lined tray and chill until firm SPOON a little chocolate onto each ball to resemble custard then decorate with Christmas sprinkles. Store, chilled, in an airtight container until required. Serve at room temperature.PLACE sultanas and brandy in a bowl, cover and stand overnight to plump the fruit. Drain well and discard brandy. COMBINE the sultanas, raisins and brandy in a heatproof bowl, cover and microwave on HIGH for 2 minutes. Carefully remove the cover, stir and cool. STIR in drained sultanas, almonds and cherries, transfer to a bowl and chill until firm enough to shape.
