Removing caffeine from the coffee requires soaking the beans before a solvent is used to extract the caffeine compound. Don’t pour freshly boiled water straight onto your coffee, as it can lead to a harsh, bitter flavour. Nescafé's Azera Americano got good remarks – Giles described the aroma as 'good and smooth', also noting it took milk well. This one has a genuine taste as there's 'no bitterness' and 'no real instant flavour'.

The water for instant coffee should be very hot but not boiling. If you can control the temperature your kettle heats up to, aim for between 80°C–85°C.
