Then, fill the jars with your hot crushed tomatoes, leaving one-half inch of headspace at the top of each jar. Screw on the lids and bands. Then, process pint jars in a boiling water canner for 35 minutes; process quarts for 45 minutes. To pressure can your crushed tomatoes, process pint or quart jars for 20 minutes. Whisk together the olive oil, balsamic vinegar, salt, pepper and sugar. Toss in the sliced cherry tomatoes to thoroughly coat. A food processor is a great tool for creating a homemade crushed tomato substitute. Start by washing and roughly chopping fresh tomatoes, discarding the cores. Place the chopped tomatoes in your food processor, and pulse until you reach the desired consistency. Be careful not to over-process, as you want to retain some texture, similar to crushed tomatoes.
