Selected Picpoul (60%) and Clairette (40%) wines are aged in ancient oak barrels in the open air, exposed to the wind, rain, sun, and sea spray. Noilly Prat is often used in cocktails, the most common and well-known of which is probably the martini, consisting of one part Noilly Prat to one or more parts gin or vodka, with a dash of orange bitters, twist of lemon, or olive garnish. To taste the dry white wine emerges, with a complex yet delicate bitter finish laced with a touch of spice.

The Noilly Prat Vermouth is made thanks to a traditional craft, from the outdoor ageing process (only applies to Original Dry and Extra Dry) to the unique maceration process known as the dodinage (stirring by hand). Noilly Prat now makes Red and Ambre vermouths as well, introduced in the 1960s and 1980s, but they are less widely known.

The blend is transferred to large casks and a secret blend of 20 botanicals (including Roman chamomile, yellow gentian, nutmeg, and bitter orange) is added by hand each day in a gentle maceration lasting 3 weeks, after filtration, the wines rest for 6+ weeks before bottling.

Noilly Prat Original Dry is the flagship of the Noilly Prat range, and an icon in the gastronomy and mixology world. The Noilly Prat company is based in Marseillan, in the Hérault department of southern France (it lies some 50 km west of Montpellier) and exclusively use white grape varieties grown in the Marseillan area. A rich golden colour, delicate bouquet and dry rounded taste come from the marrying of two wines, Picpoul and Clairette, with twenty secret herbs and plants.

The exact mix of herbs and spices that goes into Noilly Prat is a closely guarded secret, but includes camomile, bitter orange peel, nutmeg, centaury (yellow gentian), coriander, and cloves. However, in 2009, the extra-dry Noilly recipe exported to the USA was replaced by the original dry formula used worldwide. An aromatic blend of herbs and spices sourced from all over the world are used to gently infuse the wines and create the unique bouquet and wonderful taste of Noilly Prat. Noilly Prat is produced in Marseillan, in the South of France, by the same methods since it was first created in 1813 by Louis Noilly. At its home in the South of France, a selection of fine white wines are aged outdoors in oak casks exposed to the Mediterranean sun, sea and wind for 12 months.
