This review has been a long time coming though. How exactly does Evan Williams BiB taste by itself? Let’s find out. I sampled this neat in a glencairn. Tasting Notes Dark sweets like caramel and butterscotch pair up with some notes of vanilla frosting and corn to start things off. Hints of dark fruit, red licorice and spice soon shows up and a light touch of woody astringency arrives fashionably late. David A. Mann (May 4, 2017). While it has the traditional bourbon notes of toasty oak and vanilla on the nose, there is an element of corn syrup floating around. The nose is very one-dimensional and not layered or complex. This is a cool looking bottle with very fine bourbon inside of it. But when it comes to Buffalo Trace, there are so, so many great bottles to choose from that are, frankly, cheaper than this. In the end, it kind of feels like you’re paying a premium to collect little horses for behind your bar.

It must be created from a mixture of fermented grain (called mash) that is at least 51% corn. The other 49% is usually a mixture of barley, rye or wheat. There are some tradeoffs though. Small Batch is a bit sweeter and covers up the youthful grainy notes much better. That may be because it has older barrels dumped into it since it doesn’t have to follow the bottled in bond rules of being the product of one distillation season. B and B-: Good and above average. The best of the mass market whiskeys fit in this category, as do the bulk of the premium brands. A B- is three stars. Evan Williams is more than likely chill filtered before it’s bottled. That’s not a terribly big deal because a majority of Heaven Hill products are too. The nose has both vanilla buttercream and amber caramel with funky vanilla buttercream notes thrown in, all at different points in this huge complex monolithic nose. A hint of green apple creeps in before it moves on to a dry earthy nuance. Some very lightly roasted oak peppercorns and dried orange peel come out and join the fruit and oak and give you a nice touch of sweetness.
