For this reason, careful handling in the winery is required to avoid oxidation and acidification. Therefore, the grapes are harvested by hand to ensure they remain whole and retain their delicate aromas and flavors. Then, they are de-stemmed, crushed, and pressed to release their juice. Afterward, this juice is carefully fermented in temperature-controlled tanks. Several additional weeks of aging are then required to fully develop the Pinot Grigio characteristic flavor. Finally, the wine is filtered from enzymes and bottled. Where Is Santa Margherita Pinot Grigio Made?
