Her ‘Complete Cookery Course’ is a great reference book and her writing style is fuctional, comforting and reassuring. She also refers to 'vegetarian gelatine' in recipes which I find rather odd and in the method she shortens it further to just 'gelatine' - this makes me wonder if she's really made the recipes with agar agar or whatever or is just assuming you can. Furthermore, it has got many of their favorite ingredients such as cherry tomatoes, walnuts, apple and raisins. With over 250 dishes, Delia's Vegetarian Collection illustrates how versatile vegetarian food can be and offers the reader the ultimate collection of recipes. Having said this, these sausage rolls are a rare exception and they’re an absolute godsend when catering for my own family which includes both die-hard vegetarians and die-hard meat eaters.

Use your hands to form the dough into a ball and chill in the fridge for at least half an hour, although you can make this up to 24 hours in advance. First you need to make a batch of Delia Smith’s quick flaky pastry which is pretty foolproof and can also be used for topping sweet and savoury pies.It’s a clever idea, especially because chestnut puree is now fairly easy to come by in large supermarkets, but for me it needs more than onion, garlic and seasoning to compete with sausage meat. Tip these into the onion bowl, then stir in the chestnut puree and oatmeal, and mix (I find it easiest to use my hands for this bit), squidging it all together well. Stir until it’s all coated with flour, then add just enough very cold water (three or four tablespoons should do it) to bring the mix together into a smooth dough. For the filling, simply place all the filling ingredients in a mixing bowl, season well and mix very thoroughly.

Delicious as these are, however, they’re far softer and sweeter than a traditional sausage roll, and I’d like to find something that doesn’t feel so much like a vegetarian alternative. The grains of rice were soft and fluffy but not mushy and the vegetables were perfectly cooked and nestled in amongst the rice. Whilst I enjoy cooking and eating meat free dishes, I’m not a huge fan of vegetarian food masquerading as meat. Eggs Florentine is a good breakfast too and my very favourite (usually in Hotels) is smoked haddock topped with a poached egg.

It might work better with another kind, but then you could also encase meat-free sausages in pastry without any guidance from me. My kids tried it and abandoned the meat one and now prefer the vegetarian version even though two of them are meat eaters . The first, represented here by Christmas queen Delia Smith, though also favoured by the likes of Gary Rhodes and Prue and Peta Leith, relies on cheese. When it comes to pasta, I will usually pick a simple mushroom pasta, pesto pasta or creamy carbonara over a tomato-based pasta.
