Each water is custom-built via filtration to get the exact TDS (total dissolved solids) to match the roast profile of the two espressos. The lighter espresso gets water with less TDS. There is currently no 'certification' by the Specialty Coffee Association (SCA) for water profiles, but we have two water profiles that meet and exceed the current SCA water standards: Where are Third Wave Water Products Manufactured?
